Grilled salmon gremolata

  • 700
    g
    salmon or salmon trout steaks
  • olive oil
  • salt and milled pepper to taste
  • GREMOLATA
  • 45
    ml
    chopped Italian parsley
  • 15
    ml
    chopped sage
  • 4
    garlic cloves, crushed
  • 3
    lemons, grated peel
  • 45
    ml
    green peppercorns
 

Method

 
GREMOLATA: Mix all ingredients well. Refrigerate until required. Place fish on a baking sheet, drizzle olive oil over and season. Grill for 3 to 5 minutes on each side. Top with gremolata and serve with parsley mashed potatoes (see recipe).
