    lean pork chops
  • MARINADE

    garlic cloves, crushed

    small onion, chopped

    castor sugar

    lemon grass stems, chopped

    fish sauce
  • SAUCE

    cloves garlic, crushed
  • 1
    red chilli, sliced

    fresh ginger, julienned

    lime or lemon (juice only)

    cider vinegar

    fish sauce
 

Method

MARINADE Pound garlic, onion and sugar to a paste in a mortar. Add lemon grass and pound. Add fish sauce and mix with salt and pepper to taste. Spoon over chops and leave to marinate for at least 1 hour or overnight, turning occasionally. SAUCE Pound garlic, chilli and sugar to a paste. Stir in remaining ingredients, plus 45 ml water. Cook chops under preheated grill or braai for about 5 minutes on each side, depending on thickness, until cooked through and beginning to brown. Serve immediately with sauce and blanched pak-choi. Serves 4.
