Grilled figs with vanilla cream

    ripe figs, halved
  • 45
    ml
    honey
  • 30
    ml
    blaze (balsamic glaze)
  • handful of chopped basil leaves
  • VANILLA CREAM
  • 125
    ml
    créme fraîche
  • 125
    ml
    mascarpone cheese
  • 1
    vanilla pod
  • 5
    ml
    caramelised verjuice
 

Method

 
Preheat the grill.
Place figs, cut side up, in a grilling pan.
Drizzle over honey and blaze, then top with chopped basil leaves.
Place under grill until figs are bubbling.
Mix together crème fraîche, mascarpone and vanilla.
Sweeten with caramelised verjuice to taste. Chill.
Serve figs with a generous dollop of vanilla cream.
COOK?S NOTE
Blaze is also known as balsamic cream and is available from some large supermarkets and Italian delis.
