Grilled brinjal and blue cheese sandwich

    large aubergine
  • 90
    ml
    olive oil
  • 2
    tomatoes, diced
  • cucumber, diced
  • 30
    ml
    chopped dill or parsley
  • 125
    g
    blue cheese, crumbled
  • 1
    lemon, juice
 

Method

 
Slice brinjal lengthways into 4. Heat oil and fry brinjal slices on both sides until tender and golden. Remove and keep warm. Toss other vegetables and herbs, then mix in cheese. Place a brinjal slice on each plate. Divide cheese mixture between the 2 slices. Top each with a remaining brinjal slice. Serve with a good squeeze of lemon juice. (Heat of brinjal will melt cheese.)
