Green spring salad

Ingredients

    g
    Mixed salad leaves (like cos and butter lettuce and chicory)
  • 24
    slim green asparagus, trimmed
  • 30
    ml
    Parmesan shavings
  • 6
    radishes with their tops on
  • 30
    ml
    The dressing: walnut or hazelnut oil
  • 15
    ml
    olive oil
  • 30
    ml
    fresh lemon juice
  • 15
    ml
    wholegrain mustard
  • 15
    ml
    fat-free yoghurt
  • 5
    ml
    sea salt and milled pepper
 

Method

 
Steam asparagus until tender. Refresh them in cold water and drain. Toss with salad leaves.

Whisk dressing ingredients together. Drizzle leaves and asparagus with dressing, and toss to coat.

Arrange on individual plates and top with long shavings of Parmesan cheese and a radish.
