Green salad with apple and blue cheese

Ingredients (12)

cooked mustard dressing: white grape vinegar
125.00 ml lemon juice
150.00 ml white sugar
3.00 eggs — whisked
12.50 ml mustard — powder
5.00 ml salt
60.00 ml yoghurt — plain
salad: granny smith apples
10.00 ml water — lemon infused
50.00 ml oil — for deep frying
2.00 bread — sliced white, crusts removed
1.00 bunch lettuce
50.00 g walnuts — chopped
125.00 g blue cheese

Method:

Dressing: Heat the vinegar, lemon juice and sugar, stirring until the sugar has dissolved.
Add the whisked eggs, mustard powder and salt and heat over low heat until the sauce has thickened.
Stir continuously.
Cool and add yoghurt. Set aside.

Salad: Core the apples and cut into small wedges.
Dip them in the lemon water.
Heat the oil in a saucepan and fry the bread cubes until golden brown and crisp.
Drain on paper towels and leave to cool.
Arrange the lettuce leaves in a salad bowl and add the apple wedges and fried bread cubes.
Scatter with the walnuts and crumble the blue cheese on top.
Moisten with a little of the dressing just before serving and serve the remaining dressing on the side.
