Salad: Core the apples and cut into small wedges. Dip them in the lemon water. Heat the oil in a saucepan and fry the bread cubes until golden brown and crisp. Drain on paper towels and leave to cool. Arrange the lettuce leaves in a salad bowl and add the apple wedges and fried bread cubes. Scatter with the walnuts and crumble the blue cheese on top. Moisten with a little of the dressing just before serving and serve the remaining dressing on the side.
