Asparagus packs a mean green power punch. It is super low in calories, low in sodium, a good source of fibre and vitamin B6.
For our main compartment we combine the delicious flavours of ricotta cheese, avocados and asparagus marinated with a touch of pesto.
Asparagus is such a versatile dish so make a lovely asparagus carbonara the previous night and steam a couple of extra asparagus to add to the lunch box.
Boil water in a pot, place asparagus in boiling water and take off the heat. Let it stand for 5 min, drain and let it cool. Cut avocado in pieces, arrange asparagus on plate and place avo on top. Garnish with ricotta cheese, and a tablespoon of pesto. Flavour with salt and pepper.
