Green fig balls

    icing sugar
  • 250
    g
    butter
  • 3
    eggs, whisked
  • 10
    preserved figs, finely chopped
  • 50
    g
    walnuts, finely chopped
  • 125
    ml
    mixed peel
  • 200
    g
    Marie biscuits, crushed
  • 5
    ml
    vanilla essence
  • 200
    g
    nuts, finely chopped (optional)
 

Method

 
Spray a baking sheet with non-stick spray. Blend all the ingredients except the nuts and press into a prepared baking sheet. Cover with plastic wrap and leave in the fridge overnight until firm. Cut into squares or roll teaspoonfuls of the mixture into balls before roiling in the chopped nuts. Chill before serving. Makes about 30 balls.
