Green fig and buttermilk pudding

    self-raising flour

    sugar

    milk
  • 500

    buttermilk
  • 3
    extra-large eggs
  • 15

    margarine
  • 6
    green figs preserved in syrup, finely chopped
  • extra green figs for serving separately

Preheat the oven to 180 ºC (350 ºF). Spray a deep 21 x 30 cm ovenproof dish with non-stick spray or grease with butter or margarine. Mix the self-raising flour and sugar in a mixing bowl. Whisk the milk, buttermilk, eggs and margarine together and add to the self-raising flour mixture. Mix well until smooth and lump-free. Add the green figs and mix. Pour into the prepared oven dish and bake for 50 minutes or until set and golden brown on top. Serve with extra green figs and a little of the syrup. Serves 6-8.
