Green bean salad with feta cheese

    young green beans, topped and tailed
  • 2
    bay leaves
  • 10
    black olives, stoned and halved
  • 1
    onion, sliced
  • 1
    red pepper, seeded and cut into julienne strips
  • 150
    g
    feta cheese, cubed
  • SALAD DRESSING
  • 1
    lemon, juice and rind
  • 30
    ml
    sunflower oil
  • 30
    ml
    olive oil
  • freshly ground black pepper to taste
  • 5
    ml
    honey
 

Method

 
Steam the green beans and bay leaves for a few minutes in the microwave oven until tender but still firm, and so the colour is still retained. Drain well and remove the bay leaves. Mix in the olives, onion and pepper. Blend all the ingredients for the salad dressing and pour over the salad. Chill for about 4 hours, sprinkle with the feta cheese and serve.
