Ingredients (12)

50.00 ml oil
2.00 onion — chopped
2.00 green pepper — deseeded and chopped
1.00 aubergine — sliced into rings
5.00 garlic — cloves, crushed
1.00 kg green beans
5.00 tomatoes — peeled and chopped
10.00 ml oregano
4.00 bay leaves
20.00 ml brown sugar
salt and freshly ground black pepper — to taste
50.00 g feta cheese

Method:

Heat the oil in a large pan and sauté the onion, green pepper, brinjal and garlic until soft.
Add the green beans, tomatoes, seasonings and a little water, cover and simmer slowly until the beans are done. Stir occasionally.
Remove the bay leaves, season with extra salt and pepper if necessary and place the feta cheese on top.
Cover and heat for another 5 minutes.
