Green bean casserole

    oil
  • 2
    onions, chopped
  • 2
    green peppers, chopped
  • 1
    medium aubergine, sliced into rings
  • 5
    cloves garlic, crushed
  • 1
    kg
    young green beans
  • 5
    tomatoes, skinned and chopped
  • 10
    ml
    origanum
  • 4
    bay leaves
  • 20
    ml
    brown sugar
  • salt and pepper to taste
  • 50
    g
    feta cheese
 

Method

 
Heat the oil in a large pan and sauté the onion, green pepper, brinjal and garlic until soft. Add the green beans, tomatoes, seasonings and a little water, cover and simmer slowly until the beans are done. Stir occasionally. Remove the bay leaves, season with extra salt and pepper if necessary and place the feta cheese on top. Cover and heat for another 5 minutes.
