Greek macaroni salad

  • SALAD DRESSING
  • 45
    ml
    sunflower or olive oil
  • 30
    ml
    fresh lemon juice
  • 5
    ml
    honey
  • salt and freshly ground black pepper
  • 250
    g
    macaroni
  • 3
    rounds feta cheese, coarsely crumbled
  • 2
    spring onions, sliced into rings
  • 1
    green pepper, seeded and sliced into strips
  • 250
    g
    cherry tomatoes, halved
  • 30
    ml
    chopped fresh origanum
  • 45
    ml
    chopped fresh parsley
  • 20
    black olives, stoned and quartered
 

Method

 
Whisk together the salad dressing ingredients and season with salt and black pepper. Cook the pasta until done and drain. Moisten the pasta with the salad dressing and cool. Add the remaining salad ingredients and season with salt if necessary. Serves 4-6.
