Goat's milk cheese with tarragon and garlic

  • 500
    g
    goat's milk cheese (use any firm variety)
  • 1
    Litres
    olive oil
  • 15
    ml
    white wine vinegar
  • 1
    bunch tarragon, stripped of stalks
  • 1
    bulb garlic, cloves peeled
  • 16
    whole peppercorns
 

Method

 
1. Cube cheese. 2. Mix rest of ingredients together. Pour over cheese and leave in a jar for at least 4 days before serving.
