Goat's milk cheese and tomato salad

Ingredients

  • 225
    g
    low-fat goat's milk cheese
  • 110
    ml
    olive oil
  • 15
    ml
    each fresh parsley, basil and origanum
  • 1
    clove garlic
  • 2
    ml
    chilli flakes
  • 1
    lemon (juice and grated rind)
  • 350
    g
    cherry tomatoes
  • 125
    g
    lettuce
  • 125
    g
    rocket
  • 1
    red onion
 

Method

 
Slice cheese and arrange in a shallow dish greased with 15 ml oil.
Blend herbs, garlic, chilli, lemon juice and rind and remaining oil in a food processor. Pour over cheese, chill and marinate for 2 hours.
Toss remaining ingredients in a bowl and season. Add marinated cheese, toss gently and serve with fresh wholewheat bread.
