    half cucumber

    capers
  • 1
    bunch of spring onions
  • 1
    garlic clove
  • Italian parsley

    Kalamata olives
  • 10

    fresh lemon juice
  • 15
    ml
    olive oil
  • 30
    ml
    fat-free yoghurt
  • salt and milled pepper
  • 5
    ml
    sugar
 

Method

 
Drain chopped cucumber in a sieve for about 30 minutes.
Mix all ingredients together and season to taste and serve.
Serve with chicory (endive) or baby gem lettuce leaves.
