Gnocchi with rocket pesto

Ingredients

  • 450
    g
    fresh gnocchi
  • 100
    ml
    rocket pesto
  • 1
    red chilli, chopped
  • 25
    ml
    capers, chopped
  • 2
    anchovies, chopped
  • 30
    g
    wild rocket
 

Method

10 minutes
 
Prepare the gnocchi according to the packet instructions.
Mix the pesto, chilli, capers and anchovies together.
Add the mixture to the hot gnocchi and toss to mix.
Roughly tear the rocket, stir and serve.

Tips
Do not add salt to this dish as the anchovies are often salty enough.
Serve with black pepper and crusty bread.
The sauce can be prepared ahead of time (make larger quantities if you are entertaining) and prepare the gnocchi just before serving.
