Gluten-free apple crumble

    tins pie apples, drained and cubed
  • 140
    ml
    brown sugar
  • juice and zest of 2 oranges
  • 250
    ml
    dried fruitcake mixture
  • 80
    ml
    chopped glacé cherries
  • TOPPING:
  • 25
    ml
    butter
  • 80
    ml
    rice flour
  • 30
    ml
    castor sugar
  • custard, to serve
 

Method

20 min - 30 min
 

Oven temperature: 200°C

Place the apples, sugar, orange juice and zest into a saucepan and simmer for five minutes. Stir in the fruit mix and cherries and cook for a further two minutes. Spoon into individual ramekins or a large ovenproof dish.

Topping

Rub the butter into the flour then add the sugar. Spoon over the fruit and bake in a preheated oven for 20 to 30 minutes, until golden. Serve warm with custard.

Serves: 6-8
