Glazed gammon steaks with peaches

    ripe peach, peeled and diced
  • 25
    light brown sugar
  • 2
    Dijon mustard
  • 2
    gammon steaks
  • 5
    green peppercorns
  • fresh peach slices and coriander sprigs to garnish
  • new potatoes and French beans to serve


1. Place the butter in a shallow, flat dish and cook on HIGH for 1 minute to melt. Add the diced peach, cover and cook on HIGH for 2 minutes. 2. Stir in the sugar and mustard and cook, uncovered, on HIGH for 2 minutes. 3. Add the gammon steaks with the green peppercorns. Cook on HIGH for 3 minutes, turning once. 4. Just before serving, place the dish under a preheated grill for 2 minutes to glaze the steaks. Garnish with fresh peach slices and coriander sprigs, and serve with new potatoes and French beans.
