Gingered strawberry punch

    root ginger, peeled

    large pineapple
  • 4
    large strawberries, thinly sliced
  • 750
    apple juice
  • 1
    Granny Smith apple, thinly sliced
  • 6
    geranium leaves or mint sprigs
  • 1
    kiwi fruit, thinly sliced
  • sparkling wine
  • ice cubes


1. Slice the ginger finely, then place in a saucepan with the water and bring to the boil. Remove from the heat, cover tightly and leave to cool. 2. Place the pineapple into a food processor and mix until smooth. Sieve into the punch bowl and discard the rest. 3. Add the strained ginger and apple juice and stir well. 4. Add strawberries, apple slices, pineapple slices, kiwi fruit and the leaves. Cover with clingfilm and chill until ready to serve. 5. Just before serving add sparkling wine to taste and lots of ice cubes. Ladle into glasses to serve. Makes about 2.5 litres.
