Gingered pears

    Beurre Bosch pears, peeled and halved lengthways

    ginger, peeled and chopped

    Seville orange or other bitter marmalade

    whisky or brandy

    lemon, shredded peel

    lemon, juice

    orange, juice

    butter
  • GINGER CREAM (optional)

    ml
    thick natural yoghurt
  • 125
    ml
    thick cream
  • 3
    knobs preserved ginger, sliced
  • 15
    ml
    ginger syrup (from preserve)
 

Method

 
Preheat oven to 180 ºC. place pear halves in a buttered oven-to-table dish. Mix next 6 ingredients and pour over pears. Dot pears with butter. Bake for about 1 1/4 hours. GINGER CREAM: Mix ingredients and chill. You may need more or less ginger, depending on taste. Serve pears hot with ginger cream on the side. Mint, orange peel or fresh lavender make good garnishes.
