Ginger meatballs

  • 750
    g
    mince
  • 60
    ml
    fresh breadcrumbs
  • 1
    onion, finely chopped
  • salt and pepper
  • 80
    ml
    lemon juice
  • oil for frying
  • SAUCE
  • 400
    ml
    beef stock
  • 60
    ml
    brown sugar
  • 125
    ml
    crushed ginger biscuits
 

Method

Mix the mince, breadcrumbs, onion, salt and pepper together. Add 40 ml of the lemon juice and mix lightly. Shape into 15 meatballs and fry in the heated oil until golden brown. Remove from the pan and set aside. Pour the remaining lemon juice and beef stock into the pan and add the brown sugar and crushed ginger biscuits. Stir well to prevent the mixture from forming lumps. Simmer until the sauce thickens and season with salt if necessary. Add the meatballs to the sauce and simmer for about 10 minutes or until the meatballs are done. Serve with rice or potato and a salad. Serves 6.
