    game such as springbok and lard to taste, cut into pieces
  • 60
    ml
    salt
  • 60
    ml
    ground coriander
  • 25
    ml
    coarsely grated black pepper
  • 15
    ml
    ground cloves
  • Worcestershire sauce
 

Method

 
Place the meat and lard in a large non-metal dish and sprinkle with the spices. Sprinkle with Worcester shire sauce to taste and mix well. Add a little water and mince the meat in a meat mincer. Stuff the mixture into casings and chill until needed. Cook over medium-hot coals until golden brown.
