    (1 cup) dried apricots, chopped
  • 250
    ml
    (1 cup) All Bran flakes
  • 375
    ml
    (1-1/2 cups) milk
  • 125
    ml
    (1/2 cup) brown sugar
  • 15
    ml
    (1T) golden syrup
  • 500
    ml
    (2 cups) self-raising flour
  • 125
    ml
    (1/2 cup) chopped pecan nuts
  • 1
    apricot, sliced
 

Method

Pre-heat oven to 200°C. Grease a muffin tin.
1. Mix together dried apricots, All Bran flakes, milk, sugar and syrup in a large bowl.
2. Cover and refrigerate overnight.
3. Sift flour and stir, together with nuts, into the apricot mixture. Spoon into muffin tins.
4. Bake for 30 minutes, or until muffins are golden-brown.
