  • FILLING
  • 1
    jar fruit mince
  • 1
    egg, lightly whisked
  • 15
    ml
    grated fresh orange rind
  • 45
    ml
    castor sugar
 

Method

 
Mix all the filling ingredients and spread evenly over the dough. Roll out the other half of the pastry and place on top of the filling, pressing down lightly. Sprinkle with castor sugar and bake at 180 ºC until straw coloured and done. Cool in the pan and cut into diamond shapes. Makes 14 fairly large pastries.
