Fruit salad meringue tart

    cm
    prebaked shortcrust pastry shell
  • 250
    ml
    freshly made fruit salad
  • 500
    ml
    vanilla ice cream
  • 1
    quantity prepared Italian meringue mixture (see recipe)
 

Method

3-4 min
 
Preheat oven to 190 ºC. Drain and spoon fruit salad into pie shell. Cover with ice cream. Pipe meringue mixture over ice cream. Make sure ice cream is well covered with no gaps. Work quickly to prevent ice cream from melting. Bake in the oven for 3-4 minutes until meringue is golden. Serve immediately. Serves 8.
