    lemon

    mixed dried fruit
  • 125

    castor sugar
  • 5
    ml
    ground cinnamon

    mixed spice
  • 5
    ml
    ground ginger
  • 3
    ml
    freshly grated nutmeg

    g
    butter
  • 250
    ml
    dry cider
  • 65
    ml
    brandy or rum
 

Method

 
1. Peel, core and finely dice apples. Place in a large heavy-based saucepan. 2. Grate the rind of the oranges and lemon, taking care not to include any white pith. Squeeze out the juice and add to the pan with the grated rind and the remaining ingredients. 3. Slowly bring to the boil. Reduce heat and simmer gently. Cook, uncovered, for 1 hour, stirring occasionally. 4. Cook until mincemeat is thick and pulpy. The apple will break down and the dried fruit will look plump and glossy. Place in sterilised jars, seal well and leave to mature for at least 2 weeks before use. Alternatively, cool and pack into plastic containers and freeze.
