    butter

    soft brown sugar

    extra-large egg, lightly beaten

    wholewheat flour

    baking powder
  • pinch salt

    golden sultanas

    ml
    chopped walnuts or pecan nuts

    ground cinnamon
  • 2
    ml
    mixed spice
  • 5
    ml
    vanilla essence
  • 1
    large ripe banana, mashed
  • 45

    plain yoghurt
 

Method

Preheat the oven to 160 ºC and spray a 20 x 10 cm loaf tin with non-stick spray or butter lightly. Cream the butter and brown sugar until light. Add the egg and beat well. Add the remaining ingredients, mix well and turn into the prepared loaf tin. Bake for about 1 1/4 hours or until a testing skewer comes out clean. Serve with butter. Makes 1 small loaf.
