Fruit and almond loaf with honey

    milk

    ml
    honey
  • 50

    sultanas
  • 50
    g
    whole almonds
  • 1
    orange, grated rind
 

Method

 
Preheat the oven to 190 ºC (375 ºF). Spray a 22 x 11 cm loaf tin with non-stick spray and line the bottom with wax paper. Sift together the self-raising flour and cinnamon. Grate in the butter and rub in with your fingertips until the mixture resembles breadcrumbs. Add the glacé fruit and castor sugar. Add the whisked egg and milk and mix to form a soft dough. Turn half the flour mixture into the prepared loaf tin, spreading it evenly. Mix half the honey with the sultanas, almonds and orange rind and spread evenly over the mixture in the loaf tin. Turn the remaining flour mixture into the tin, spreading it evenly. Pour the remaining honey on top. Bake for 45-50 minutes or until a testing skewer comes out clean when inserted into the centre of the loaf. Cover with a sheet of aluminium foil if the top layer becomes too dark and the loaf is not completely done. Turn out onto a wire rack to cool completely.
