    potato flour or cornflour

    soft white breadcrumbs

    soda water

Method

 
Mix pork and veal in a bowl. Mix in onion, using a large fork. Whisk egg and add to meat with seasoning, potato flour and breadcrumbs. Mix in enough soda water and milk to make a dropping consistency. You may need a little more soda water. Wet your hands lightly by dipping them in cold water, then shape frikadeller. Heat olive oil and butter in a large, non-stick pan and, when hot but not smoking, fry frikadeller on both sides until golden brown, 10 to 15 minutes. Serve with steamed, shredded cabbage covered with well-seasoned white sauce and sprinkle with freshly grated nutmeg. An alternative Danish serving method is with potato salad made from waxy boiled potato slices mixed with a homemade crème fraîche dressing and topped with chives.
