Fried cauliflower salad

    large cauliflower, broken into florets
  • oil for deep-;frying
  • 250
    g
    bacon
  • 100
    g
    pecan nuts
  • 200
    ml
    feta cheese squares
  • DRESSING
  • 200
    ml
    sour cream
  • 65
    ml
    mayonnaise
  • salt and freshly ground black pepper
  • 2
    ml
    mustard powder
  • parsley
 

Method

 
Wash the cauliflower florets in salted water and pat completely dry with paper towelling. Heat the oil and deep-fry the florets until they just begin to change colour. (Do not overcook or they will go soggy.) Fry the bacon in a pan until crisp and chop finely. Mix the cauliflower florets, bacon, pecan nuts and feta cheese in a salad bowl or on a platter. Blend the salad dressing ingredients together and serve with the salad.
