Fresh pineapple and ginger cream

    large ripe pineapple
  • 150
    g
    fromage frais or cottage cheese
  • 60
    ml
    thick yoghurt
  • 60
    ml
    cream
  • 30
    ml
    honey
  • 100
    g
    ginger biscuits, crushed
 

Method

 
Peel pineapple, taking care to remove eyes. Cut into bite-sized chunks and chill until needed. Mix fromage frais, yoghurt, cream and honey together well and chill until ready to serve. TO SERVE: Spoon cream mixture into serving dishes, top with pineapple chunks and sprinkle biscuit crumbs over.
