Fresh pasta with chilli, rocket and Parmesan

    boiling water
  • salt
  • oil
  • 150
    g
    fresh tagliolini pasta
  • 15
    ml
    olive oil
  • 1
    clove garlic, crushed
  • 0.50
    red chilli (or 2 ml dried chilli flakes)
  • 0.50
    lemon, peel and juice
  • 30
    g
    (1 packet) rocket, chopped
  • 30
    g
    grated Parmesan
  • milled pepper
 

Method

 
Fill a large pot with water, add salt and a dash of oil and bring to the boil.
Cook pasta till al dente, 3 to 4 minutes.
While the pasta is cooking, heat olive oil in a small pan, add garlic and chilli and sauté for 1 minute.
Drain pasta and add it to the garlic-chilli mixture.
Add rocket and Parmesan and toss to combine.
Season with pepper, pile into heated bowls and serve immediately.
Cook's note:this is only a starter portion, but should get the tastebuds tingling.
