Fresh asparagus vinaigrette with Parmesan shavings

Ingredients (8)

32.00 asparagus
parmesan cheese — shavings
VINAIGRETTE
125.00 ml fresh chillies — 573
45.00 ml vinegar — white wine
1.00 ml sugar
5.00 ml wholegrain mustard
5.00 ml mayonnaise
salt and freshly ground black pepper

Method:

VINAIGRETTE: Whisk all ingredients together well, seasoning to taste with salt and pepper. Set aside.
Steam asparagus until tender but still firm. Arrange warm asparagus spears on plates and drizzle vinaigrette over.
Shave thin slices of Parmesan cheese from wedge, using a potato peeler, and place on top of asparagus.
Serve immediately, with lots of crusty white bread to mop up the juices.
