Fresh asparagus vinaigrette with Parmesan shavings

    asparagus spears
  • Parmesan cheese for shaving
  • VINAIGRETTE

    olive oil

    white wine vinegar
  • 1

    sugar
  • 5

    wholegrain mustard
  • 5
    ml
    good-quality mayonnaise
  • salt and milled pepper
 

Method

 
VINAIGRETTE: Whisk all ingredients together well, seasoning to taste with salt and pepper. Set aside. Steam asparagus until tender but still firm. Arrange warm asparagus spears on plates and drizzle vinaigrette over. Shave thin slices of Parmesan cheese from wedge, using a potato peeler, and place on top of asparagus. Serve immediately, with lots of crusty white bread to mop up the juices.
