Fresh apple and bran muffins

    g
    Golden Cloud Bran Muffin Mix
  • 125
    ml
    vegetable oil
  • 375
    ml
    milk
  • 1
    large egg
  • 2
    Pink Lady apples, chopped
  • 250
    ml
    pecan nuts, chopped
  • 190
    ml
    sultanas
  • 1
    Pink Lady apple, finely sliced
  • 125
    ml
    brown sugar
 

Method

Preheat oven to 180°C.

Mix the muffin mix, oil, milk and egg together in a large bowl. Add the chopped apple, pecan nuts and sultanas and combine well.

Line a muffin tray or small ramekins with paper casings. Spray the casings with non-stick spray. Spoon the muffin mixture into the paper casings until they are ¾ full, then top with the sliced apple. Sprinkle with the brown sugar and place in a preheated oven.

Good idea:

As an alternative, prepare the batter and pour into individual mini loaf tins. Decorate with the sliced apple and sprinkle some brown sugar on top.
