Fragrant treacle tart

Ingredients

  • PASTRY
  • 275 g flour
  • 175 g butter, in chunks
  • 10 ml grated orange zest
  • 2 egg yolks
  • FILLING
  • 125 ml coconut
  • 250 ml stale breadcrumbs
  • 125 ml golden syrup
  • 30 ml orange juice
  • 10 ml orange zest
 

Method

 
Preheat oven to 180 °C.
PASTRY:
Place flour in a bowl, add butter and rub in with your fingertips.
Mix in egg yolks with a fork and bring together to form a firm dough; a little water may be needed.
Roll out on a floured board, and flop over on a 25 cm round, greased tart tin.
Press the pastry in and cut around the edges.
Lay a piece of wax paper on the bottom and fill with beans.
Chill while you make the filling.
FILLING:
Mix all the ingredients in a bowl.
Bake the pastry for 10 minutes.
Remove the paper and beans and bake for another 5 minutes.
Spoon the filling into the pastry shell and bake for another 5 minutes.
Remove and cool on a wire rack.
