Ingredients (10)

40.00 ml sunflower oil
2.00 onions — medium, chopped
2.00 garlic — cloves, crushed
5.00 ml fresh ginger — freshly grated
25.00 ml curry powder
10.00 ml coriander — ground
400.00 ml coconut milk
800.00 g hake — frozen fillets
25.00 ml lemon juice
5.00 ml sugar

Method:

1. Heat oil in a saucepan and sauté onions until soft. Add garlic, ginger and fry for two minutes. Add curry powder and coriander and cook for a further two minutes. Add coconut milk and bring to the boil.
2. Add fish and allow to simmer for 10 minutes. Remove from heat, stir in lemon juice, sugar and salt to taste. Serve with rice and garnish with fresh coriander.
