Fragrant curried fish

Ingredients

    ml
    sunflower oil
  • 2
    medium onions, chopped
  • 2
    cloves garlic, crushed
  • 5
    ml
    freshly grated ginger
  • 25
    ml
    curry powder
  • 10
    ml
    ground coriander
  • 400
    ml
    coconut milk
  • 800
    g
    frozen hake steaks
  • 25
    ml
    lemon juice
  • 5
    ml
    sugar
 

Method

15 minutes
 
1. Heat oil in a saucepan and sauté onions until soft. Add garlic, ginger and fry for two minutes. Add curry powder and coriander and cook for a further two minutes. Add coconut milk and bring to the boil. 2. Add fish and allow to simmer for 10 minutes. Remove from heat, stir in lemon juice, sugar and salt to taste. Serve with rice and garnish with fresh coriander.
