Flavoursome mealie meal porridge

    water
  • 10
    ml
    olive oil
  • 25
    ml
    butter
  • salt
  • 3
    whole cloves garlic
  • 1
    sprig fresh thyme
  • 500
    g
    mealie meal
  • little chopped parsley or cabbage
 

Method

 
Place the water, oil, butter, salt, garlic and thyme in a large saucepan and bring to the boil. Blend the mealie meal with a little water to form a stiff paste. Stir into the boiling water, blending well to prevent the mixture from forming lumps. Reduce the heat and simmer for about an hour, stirring every now and then. Add the chopped parsley or cabbage just before serving.
