Flavoursome chicken curry

    onions, cut into chunks

    piece fresh ginger, grated or choopped

    cashew nuts
  • 45

    sunflower oil
  • 2
    red chillies, seeded and chopped
  • 5

    ground cumin (jeera)
  • 5
    ml
    turmeric
  • 5
    ml
    ground white pepper
  • 750
    ml
    chicken stock
  • 8
    chicken breast fillets, diced
  • 150
    ml
    plain yoghurt
  • 2
    bananas sliced
  • 45
    ml
    chopped fresh dhania (optional)
 

Method

 
Process the onions, garlic, ginger and nuts in a food processor to make a paste. Heat the oil in a large oven pan and over moderate heat, stir-fry the onion and nut mixture with the chillies and cumin for 10 minutes, taking care not to scorch the mixture. Add the turmeric and pepper and pour over the stock. Simmer slowly for 5 minutes before adding the chicken pieces. Cover and simmer slowly until the chicken is just done. Stir in the yoghurt, banana slices and dhania and serve with white rice and naan bread.
