Ingredients (5)

4.00 Beef Sirloin — steaks
30.00 ml fresh chillies — 573
100.00 ml peppercorns — pink, crushed
60.00 ml brandy
125.00 ml cream — fresh

Method:

Rub each piece of sirloin with olive oil followed by the pink peppercorns.
Heat a large frying pan and cook the sirloin to taste.
Pour over the brandy and light with a match.
Pour in the cream and allow to reduce and thicken slightly.
Season to taste and serve with mashed potatoes and seasonal vegetables.

VARIATION
Replace the sirloin with ostrich.
The strong flavours of the ostrich go really well with the pink peppercorns.
Serve the ostrich with chips for a Friday night treat for the family.
