Fish stir-fry

    onion, sliced into thin rings

    clove garlic, crushed
  • oil

    young green beans, topped and tailed
  • 200

    fresh button mushrooms, sliced
  • 2
    stalks celery, sliced
  • few young mealies (optional)
  • 800
    g
    frozen hake fillets, cubed
  • salt and pepper to taste
  • flour for rolling in
  • 375
    ml
    sweet 'n sour sauce
  • 5
    ml
    peri peri sauce
 

Method

 
Sauté the onion and garlic in a little oil till soft. Add the vegetables and stir-fry t till just soft but still slightly crisp. Remove from the pan and set aside. Season the hake cubes with salt and pepper and roll in the flour. Fry a few cubes at a time in a little oil till slightly brown and done. Return the vegetables to the pan. Blend the sweet 'n sour sauce with the peri peri sauce and pour over the fish mixture. Mix gently and heat through. Serve immediately. Serves 4.
