Fish cakes

Ingredients

  • 3
    fish fillets of your choice, de-boned and skinned
  • a small handful of bread crumbs
  • 1
    egg
  • juice of a lemon
  • a few sprigs of parsley of coriander
  • salt to taste
  • olive oil
 

Method

Put all the ingredients except the olive oil into a food processor and mix thoroughly. Don't overdo it as it can become very mushy. Remove the ingredients and make them into round patties a little smaller than the size of a burger. Cook them in a frying pan with a little olive oil until they are golden brown and a little crispy on the outside.
