Fillet steak with flavoured fillings

    fillet steak
  • GARLIC FILLING

    hard margarine
  • 3
    cloves garlic, crushed
  • 2
    spring onions, finely chopped
  • RED PEPPER AND HERB FILLING
  • 1
    small red pepper, halved and seeded
  • 125
    g
    hard margarine
  • 10
    ml
    fresh origanum, chopped
  • 10
    ml
    fresh chives, chopped
 

Method

15-20 min
 
Trim fillet steaks of excess fat and sinew. Using a sharp knife, cut a pocket into the side of each fillet. To make the garlic filling, beat margarine until creamy. Add garlic and spring onions and beat until smooth. To make the red pepper filling, brush the pepper halves with oil and grill, skin side up, until skin blisters and blackens. Cool and peel, then chop. Beat margarine until creamy. Add red pepper and herbs and season to taste. Spoon 2-3 teaspoons of garlic filling into 2 of the steaks and 2-3 teaspoons of red pepper filling into the remaining steaks. Cook in a grill pan over medium-hot heat. Brush steaks with remaining filling mixture while they are cooking. Serve immediately with potato chips and salad. Serves 4.
