Fennel salad

Ingredients

  • mixed salad leaves
  • 3
    fennel bulbs
  • olive oil and seasoning
  • lemon juice
  • handful Italian parsley
  • handful feta cheese, crumbled
 

Method

 
Slice fennel bulbs, toss with lemon juice, olive oil and seasoning.
Stir in lots of roughly chopped Italian parsley and a handful of crumbled feta cheese.
Serve on a bed of mixed leaves.
