Fancy carrots

    frozen baby carrots
  • 200
    ml
    mayonnaise
  • 50
    ml
    finely chopped parsley
  • 30
    ml
    finely grated onion
  • 15
    ml
    creamed horseradish sauce
  • 30
    ml
    butter
  • 30
    g
    fresh white breadcrumbs
  • paprika
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Spray an ovenproof serving dish with non-stick spray. Place the carrots in a glass dish, pour a little boiling water over them and cover with plastic wrap. Microwave for 7-10 minutes on 100 per cent power until the carrots are just soft and cooked. Drain well and turn into the prepared serving dish. Blend the mayonnaise, parsley, onion and creamed horseradish sauce and pour over the carrots. Melt the butter in a small saucepan and fry the breadcrumbs until golden brown. Sprinkle over the carrots. Finally, add a sprinkling of paprika. Bake for 15-20 minutes until golden brown and hot. Serves 4-6.
