    vanilla essence
 

Method

 
Soak raisins in lukewarm water for 10 minutes. Meanwhile, cream margarine and sugar, then add remaining ingredients and mix. Add the raisins and water and stir until combined. Spray a muffin pan with non-stick cooking spray and fill with the batter. Bake in a preheated 180 ºC oven for 20 to 25 minutes. Enjoy with cheesy pear and celery spread (see recipe).
