Economical rusks

    wholewheat flour

    cake flour

    baking powder

    cream of tartar

    bicarbonate of soda

    salt
  • 500
    ml
    sugar
  • 1
    Litres
    water
  • 500
    g
    butter or margarine
  • 30
    ml
    vinegar
 

Method

+/- 4 hours
 
Preheat the oven to 180 ºC and spray a large oven pan with non-stick spray or grease lightly with margarine. Mix the dry ingredients and rub in the butter. Mix the water and vinegar and add to the dry ingredients to form a soft dough. Turn into the prepared pan, spreading evenly. Bake for about 1 hour until cooked and pale brown. Cool and cut into squares. Dry out at 100 ºC for 3 hours, cool completely and store in airtight containers. Makes 96 rusks.
