    fresh fish, cut into pieces

    plum tomatoes, quartered
  • 1
    onion, cut into wedges
  • handful
    each calamata and green olives, pitted and halved
  • fresh basil, to serve
  • crusty bread, to serve
  • MARINADE:
  • 50
    ml
    olive oil
  • 80
    ml
    dry sherry
  • 1
    clove garlic, crushed
 

Method

Mix the marinade ingredients together and pour half over the fish. Season with salt and black pepper. Leave to marinate while preparing the rest of the ingredients.

Arrange the tomatoes and onion in an oiled oven-roasting dish and drizzle the remaining marinade over. Roast for 10 minutes. Place the fish on top and roast for a further 10 minutes. Scatter with the olives and roast again for 5 to 10 minutes or until the fish is just cooked. Sprinkle with fresh basil and serve with crusty bread.
