Easy mustard chicken

    chicken pieces
  • salt and freshly ground black pepper
  • SAUCE
  • 125
    ml
    sugar
  • 50
    ml
    dry mustard powder
  • 50
    ml
    cake flour
  • 125
    ml
    grape vinegar
  • 250
    ml
    mayonnaise
  • 250
    ml
    boiling water
 

Method

Preheat the oven to 180ºC and butter or spray a large ovenproof dish with non-stick spray. Trim the chicken pieces of any excess fat and skin and season with salt and black pepper. Arrange in the prepared dish. Mix all the dry ingredients for the sauce and beat in the vinegar, mayonnaise and boiling water. Pour over the chicken pieces and bake for about 45 minutes or until the chicken is cooked and tender. Serves 6-8.
