Easy curry

    oil
  • 1
    leg of lamb, deboned and cubed (or about 1 kg stewing meat, cubed)

    cloves garlic, crushed
  • 2
    onions, chopped
  • 30

    mild curry powder
  • 2
    tomatoes, skinned and chopped
  • 125
    ml
    water
  • 5
    ml
    salt
  • 2
    Granny Smith apples, peeled and diced

    sultanas
 

Method

Heat the oil in a saucepan and brown the meat cubes. Remove from the pan and set aside. Sauté the garlic and onions in the same saucepan until soft and fragrant. Add the curry powder and stir-fry for about 1 minute longer. Add the tomatoes and water and return the meat cubes to the pan. Stir until the meat is covered with the curry mixture. Season to taste with salt. Bring to the boil, reduce the heat, cover and simmer for about 40-60 minutes or until the meat is tender. Add the diced apple and sultanas and simmer for about 10-15 minutes until the apple is tender and the flavours are well blended. Serve with rice or buttered couscous and a green salad. Serves 6.
