    butter
  • 35
    ml
    Madeira
  • 45
    g
    icing sugar
  • VANILLA SAUCE
  • 20

    sugar
  • vanilla essence
  • 700
    ml
    milk
  • 2
    egg yolks
  • BLUEBERRY SAUCE
  • 250
    g
    liquidised blueberries
  • 100
    g
    sugar
  • green and red grapes
  • brandy to cover
 

Method

 
1. Mix shortbread ingredients together. Roll out and cut into small rounds. Bake at 150 ºC until firm and brown. 2. Soak the sugar and vanilla essence in the milk. Bring the mixture to the boil; remove from the heat. Add the egg yolks, taking care not to recook the mixture. 3. Combine blueberries and sugar and bring to the boil. TO ASSEMBLE : Marinate the grapes separately in a little brandy. Layer them alternately with the shortbread. Dust the top layer of shortbread with icing sugar. ON THE PLATE Pour blueberry sauce on one half of the plate and vanilla on the other. Where they meet, using a toothpick, combine the sauces. Serve.
